Mario's recipe (senza pomodoro). I think that if you get the skin roasted properly and then further roast it with the spicy mustard on it, it will turn out beautifully. I tried roasting entirely in the oven. He browned the skin in a skillet and I think that makes the difference. Tasty, but not reaching it's potential. will need another go!
